ASTI An intense experience of commitment, sharing and lots of sweetness: on the occasion of Pope Francis’ visit to Portacomaro, his family’s town of origin, and in Asti, the boys and girls of Albergo Etico took care of serving lunch in bishopric and proposed a special dessert, created for the occasion. Albergo Etico was born with the aim of enhancing the talent of people with disabilities, promoting their full social inclusion and job placement through a training course and tutoring of the growth path. The first structure was born in Asti in 2015.
“It was an incredible experience and an honor for our boys and girls to meet and see the Pope up close, an emotion that will remain indelible forever, as well as an opportunity for growth,” said Alex Toselli, president of the Albergo Ethical. «I thank all those who participated in this day with professionalism and all those who allowed this great opportunity to materialize».
The recipe for the dessert, called Papalina di caffè, was elaborated exclusively for the occasion and conceived by master pastry chef Jorge Bianchini together with chef Antonio De Benedetto. It is a dessert made up of a biscuit base with tonda gentile hazelnuts (in memory of the land of Asti), a central filling of dulce de leche Argentinian (in remembrance of the lands of the Holy Father) and a meringue in the shape of a skullcap. The guys involved in the lunch were Niccolò Vallese, Jessica Berta and Irene Bombara (Albergo Etico Asti), Roxana Matei (Albergo Etico Fenis), Giacomo Cannucciari (Albergo Etico Roma), Marilù Patrizi and Daniele Berbenni (Albergo Etico Sondrio).
