Sherbet pita is a type of pita that is specific to the Aksaray region. Sorbet Pita is registered by the Turkish Patent and Trademark Institute. After registration, it was added to the list of traditional products with “geographical indication”. It is one of the dishes that represents Aksaray traditional culinary culture.
Pita Recipe with Sorbet
For the dough:
1 packet of fresh yeast
1.5 glasses of water
1 teaspoon sugar
1 teaspoon salt
as much flour as possible
for in:
1 cup unsalted curd
1 cup grated cheddar
1 cup moldy cheese
for the above,
2 tbsp butter
to squash:
2 cups sugar
2 glasses of water
1 tablespoon lemon juice
How to make sherbet pita?
Flour, sugar and water are mixed to knead the dough. Add salt and flour and knead until it is no longer sticky. Keep the dough for 1 hour. Meanwhile, the sherbet ingredients are boiled until thickened and left to cool. Break lemon sized pieces from the remaining dough. First, an oval is rolled out with a rolling pin, then it is stretched to two spans in length. The cheese mixture filling is placed lengthwise and closed from both the sides so that the cheese is not visible. Bake in the oven at 200 degrees until golden brown. When it comes out of the oven, spread butter on it and cut it into 4 finger wide pieces. Sherbet is poured over it. (This pita is often consumed for breakfast.)
